Sweet Seed Bread

The recipe with Hemp Seed by Registered Dietitian Jodie Shield and the article in Food & Nutrition Magazine were my inspiration for this weekend treat.  I'm so glad I found Hemp Seed Meal at the Mountain People's Co-op.

Pumpkin Hemp Seed Bread
(18 Slices)

2 Eggs
1/2 cup Granulated Sugar
Beat in mixer.

1 cup Pumpkin
1/4 cup Olive Oil
1/4 cup Canola Oil
Add to egg sugar mix and beat.

1 2/3 cup Whole Wheat Pastry Flour
1 teaspoon Baking Soda
1/4 teaspoon Cinnamon
1/4 teaspoon Salt
1/2 teaspoon Baking Powder
1/2 teaspoon Nutmeg
1/4 teaspoon Allspice
Mix together dry ingredients. 
Stir into batter.

Fold in:
1 cup Fresh Cranberries
1/2 cup crushed Hemp Seed

Pour into 9 X 5 inch loaf pan sprayed with Pam.
Cover with foil.  Bake at 350 F. for 50 minutes or until a toothpick inserted in the center comes out clean.  Remove foil the last 10 minutes of baking.  Cool in pan for 10 minutes before moving to a wire rack.
