Sharing Foods of the Field

Free range chicken and summer vegetables are booming here in West Virginia on the first weekend of August. It's a great weekend to share farm fresh samples at the local farmers market.  The chicken tenders are white meat chicken, tender and moist when cooked.  The fresh corn salad was a combination of sweet corn, cooked and cut off the cob, cucumbers, tomatoes, fresh herbs with an equal amount of oil and vinegar dressing . All of the ingredients were sold by vendors at today's outdoor market.

Community members of all ages enjoyed the sampling.  We served over 200 samples, each with 1/4th chicken tender and 2-3 Tablespoon salad.  I made 7 X the consumer recipes for the sampling.

Dietetic Interns Rachel and Zainab from the university assisted in the service.
