Whole Wheat Waffles with Lemon & Blueberries
(Makes 8 waffles)
Place all ingredients in the blender. Pulse, scrape sides and bottom, blend again.1/2 cup ricotta cheese, part-skim
2/3 cup skim milk
2 eggs
2 tablespoon sugar
2/3 cup whole wheat pastry flour
2 tablespoon 2 teaspoon whole grain cornmeal
1 teaspoon baking powder
2 tablespoon 2 teaspoon Earth Balance Buttery Spread, melted
1 teaspoon lemon juice
1 teaspoon lemon zest
Pour batter into a bowl. Stir in blueberries.
1 cup fresh blueberries
On a hot square waffle iron, drop 1/4 cup batter onto each 1/4th square. Bake until waffle iron light indicates that the waffles are ready.
