Indian Summer Latte with Muesli

Combining 2 RD recipes from Nutrition Blog Network produced afternoon nourishment that matched the beautiful Indian Summer day.  Nutrition Adventurer Karmen posted a Pumpkin Latte Oat recipe today.  Since I had Dietitian Debbie's muesli on hand, I combined it with the pumpkin latte in this delicious menu item:

Pumpkin Latte with Muesli

(Serves 1)

Combine muesli, coffee, water and milk.  Heat in microwave for 80 seconds.
1/2 cup muesli 
3 ounce brewed coffee (mine was leftover from the morning brew)
3 ounce water
2 ounce soy milk

Stir in pumpkin. (I just opened the can of pumpkin, so I did not have to reheat the latte) 
1/4 cup & 2 tablespoon pumpkin puree

Since this was my late lunch (I did water aerobics from noon-1 today), I also ate 1 apple, cut in wedges, and dipped in 1 tablespoon almond butter with the beverage.

This was a delicious lunch (and would be great at breakfast too!)
