Pot Luck Pasta (Meatless Monday)

One dish pasta with vegetables, whole grain spaghetti and cheese fits the MyPlate format and is made with items I had on hand.  This is a great example of Everyday Eating for a Healthier You.  The recipe was inspired by Cooking Light.

Pasta with Spinach & Tomatoes

(Serves 4)

Saute in large stock pan:
1 teaspoon olive Oil
2 cloves garlic, minced
1/3 cup onion, diced
1/4 red pepper, diced
Cook 3 minutes.  

Add:
1 can no added salt tomatoes, diced
1 1/2 cups low sodium vegetable broth
1/2 teaspoon oregano 
3 ounces whole wheat spaghetti
1 fresh zucchini, sliced
Bring to a boil.  Stir.

Add spinach:
2 cups fresh spinach
Stir and let stand for 5 minutes.

Garnish with:
Fresh grated Mozzarella Cheese
Fresh chopped Parsley
