Amaranth Porridge (Cereal Day)

National Cereal Day was Saturday when I ate my traditional oatmeal breakfast.  Today was a good morning to try the ancient grain amaranth.  I found this recipe in a recent newsstand magazine-sorry I do not have the source.

Amaranth Porridge

(Serves 3-1 cup servings)

Bring to a boil in a saucepan:
1 cup amaranth
1 1/2 cups skim milk
1 1/2 cups water
2 dates, snipped finely with kitchen shears
1/4 teaspoon five spice powder
Lower to simmer and cook uncovered for 45 minutes until thick.

Stir in:
1 teaspoon lemon zest
1/2 cup toasted pecans

This was delicious!
