Pumpkin and Silk Parfaits
(3 Appetizer-Size or 1 Breakfast Size Serving)
Pumpkin LayerIn mini food processor, pulse tofu, pumpkin and pumpkin pie spice until smooth.
3 ounce silken tofu, firm
1/4 cup pumpkin
1/4 teaspoon pumpkin pie spice
1-5.3 ounce Silk Peach and Mango Yogurt
1/2 cup muesli or granola
Assembly:
Alternate layers:
2 tablespoon yogurt
2 tablespoon tofu
2 tablespoon muesli
Repeating until all ingredients are used.
Garnish with fresh grated nutmeg.
