Global Goodness

Instead of adding fresh basil to the Asian Beef recipe, we featured our favorite Basil, Tomato & Basil combo on the side.  The entree recipe is from this month's Food and Wine Magazine.

Asian Beef with Spinach Noodles

(Serves 3)

Make marinade in food processor:
2 garlic cloves
2 tablespoons lemon grass
1 tablespoon soy sauce
1 1/2 teaspoons olive oil
1/2 teaspoon sugar
1/8th teaspoon Chinese five spice powder
Pour over beef and marinate for 30 minutes at room temperature.
8 ounce sirloin tip roast

Combine in crock pot sprayed with Pam:
1 carrot, peeled and sliced thin
3 mini sweet peppers, sliced thin
1/4 cup onion, diced
2 garlic cloves, minced
1 tablespoon fresh ginger, shredded
1 tablespoon tomato paste
2 cups low sodium beef broth

Place spices in a closed strainer and add to pot:
1 anise star
1 tablespoon lemon grass

Scrape seasonings from marinating beef.  Add beef to pot.

Cook on high for 3 hours.
Cut beef in bite size pieces.  Return to pot.

Microwave cut asparagus in microwave for 2 minutes. 
1/2 cup fresh asparagus, cut in 2 inch pieces
Add to pot. 

Cook spinach linguine for 3 minutes in boiling water.  Drain and cover with beef-vegetable mix.
