Sunnyside Skillet

Here's a quick meal, made with items most of us have on hand.  The recipe is from Rachael Ray.

Sunnyside Skillet

(Serves 2)

Brown potatoes and onion in buttery spread, covered for 6 minutes, stirring occasionally. 
4 medium potatoes, peeled and cubed
1/4 cup onion, diced
2 tablespoons Earth Balance Buttery Spread

Add peppers and cook  3 minutes.
2 mini sweet red peppers, diced

Divide potatoes among 2 individual iron skillets.  Add egg.
2 eggs

Season with Mrs. Dash.

Cover and cook 3 minutes.  Top with chopped arugula.
