Great Grits (Breakfast Cereal)

This hot breakfast cereal was comforting on this very rainy Wednesday morning.  The recipe was inspired by the  Healthy Home Cafe.

Grits, Fruit and Nuts Cereal

(Serves 3)

Bring to a boil over medium heat:
1 cup skim milk
1 cup water
1 apple, cored and diced
1/4 cup raisins
2 tablespoons maple syrup
1/4 teaspoon cinnamon

Slowly add grits, stirring while adding.  Reduce heat to simmer and partially cover.
1/2 cup stone ground yellow corn grits

Simmer for 12 minutes, stirring every couple minuts.

For one serving, I added:
1/4 cup Greek yogurt, nonfat, plain
2 tablespoons chopped walnuts
Grated nutmeg
1/2 cup skim milk
