"Apple Pear" Crisp

It made my day to see that WVU Farms has their first of the season apples and pears for sale.  I love these fruits in any variety.  The Kearneysville, West Virginia farm grows Asian pears, which are also known as "apple pears".  These pears are round, crisp and a little tart- a perfect selection for this fall convection.  The recipe was inspired by The Local Palate.   

Pear Crisp

(Serves 6)

Filling
Mix sugars, conrstarch, cinnamon and ginger.  Mix with pears. 
5 small-medium Asian pears, peeled, with seeds and core removed, sliced
1 tablespoon granulated sugar
2 tablespoon brown sugar
1 tablespoon cornstarch
1/3 teaspoon cinnamon
1 tablespoon fresh grated ginger
Fill a greased baking dish with pear mix.  I use an 8 inch oval dish. I spray the dish with an olive oil spray.

Topping
In a food processor, mix flours, brown sugar, spices, oatmeal and pecan meal.  Pulse in buttery spread.
1/3 cup all purpose flour
1/3 cul whole wheat pastry flour
1 tablespoon brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup oatmeal
1/4 cup ground pecans
3 tablespoon Earth Balance Buttery Spread
Crumble topping over pears in baking dish.

Bake at 350 F. for 50 minutes.
