The Best Nests

When I saw the ad for an egg, noodle and pesto dish, I quickly put the meal together using my own sauce and pesto recipes.  This recipe takes a lot of pans, but comes together quickly.

Pesto

(Serves 3)

Pulse together in mini food processor:
2 cups Spring Mix
1 Tbsp. grated Parmesan
2 tsp. Olive Oil
2 Tbsp. Pine Nuts
1 clove Garlic


Asian Sauce

(Serves 2)

1 teaspoon sesame oil
1/4 cup orange juice (I squeezed 2 Mandarin Oranges)
Juice from 1/2 lime
1 teaspoon reduced sodium soy sauce
1 teaspoon honey
Heat.   

   

 Poached Egg, Pesto, Noodles & Tomatoes


Saute mini sweet peppers, garlic and tomatoes in oil.
2 mini sweet peppers
1 clove garlic, minced
1/2 cup grape tomatoes, halved
1 teaspoon sesame oil

Cook noodles. 
I used whole wheat spaghetti.

Poach eggs in water to cover with 1 teaspoon vinegar.

To assemble, layer in bowls as follows:
Noodles, drained
Sauteed vegetables
Pesto dollups
Sauce
Egg

Mine is garnished with pea shoots fresh from the winter farmer's market.
