High Five Shrimp

Five shrimp, five vegetables, five ingredient sauce. . . Bob and I give this one a high five!

Five Spice Shrimp and Vegetables

(Serves 2)

Thaw and peel shrimp, leaving tails intact.  Toss with five-spice powder and cornstarch.
10 large shrimp, raw 
1 teaspoon five spice powder
1 teaspoon cornstarch

Saute vegetables in oil for 3 minutes.
2 teaspoons sesame oil
1/4 cup onion, diced
2/3 cup mushrooms, sliced
3 mini sweet peppers, sliced
1 tablespoon grated fresh ginger

Add shrimp, water and vinegar.
3 tablespoons water
1 tablespoon rice wine vinegar
Saute 3 minutes, stirring frequently.

Add asparagus and peas.
1/3 cup fresh asparagus, cut in 1 inch pieces
1/3 cup peas
(I microwaved these in water for 2 minutes prior)

Cook, stirring frequently until shrimp are cooked throughout.

Serve over brown rice.

1/2 cup instant brown rice
1/2 cup water
Bring to a boil, then simmer for 5 minutes.
